Frustration with real world classoom technology.

I am taking an Education Technology class at a near by university. I am back in school working towards my Masters in Teaching. It is a bit daunting as I am nearly 50 years old and have had next to no technology experiences or training in my last two, yes two, professions. In this class, we are learning about all the technology out there for teachers to use. Special assistive tools for children with disabilites, Smartboards, interactive computer tables etc. I am, also, a substitute teacher in the local schools. Do teachers really use these technologies I am learning about? Does it really make them better teachers? I get so frustrated and revert to my old style of using the chalk board or white board when teaching. Argh!!
